Ultimate Cauliflower Cheese

Red Leicester Cauliflower Cheese

Using our Nibbles Nose Creamy Red Leicester Cheese.

Serves 4-6


1 Large Cauliflower

2 Bay Leaves


100g Butter

2 Teaspoons English Mustard

50g Plain Flower

500ml Milk

300g Nibbles Nose: Creamy Red Leicester Cheese


  • Preheat the oven to 220’C /Gas Mark 7 /425’F
  • Start cutting the cauliflower into small pieces, place into a sauce pan.
  • Add bay leaves and cover with cold water.
  • Sprinkle salt
  • Bring to boiling point
  • Then drain and add fresh cold water
  • Drain again and remove the bay leaves
  • When dried spread evenly into an ovenproof dish
  • Now to make the cheese sauce, melt the butter in a heavy bottom saucepan
  • Begin to whisk the mustard and flour
  • Cook on a gentle heat for 5 minutes
  • Whisk in the milk when taken off the heat
  • Place back onto the heat and whisk till it thicken and starts to bubble
  • Start sprinkling handfuls of Nibbles Nose: Creamy Red Leicester Cheese and stir till its melted
  • Pour over the cauliflower and scatter the remaining cheese on top

Cook for 20 minutes, till sauce is bubbling and has a golden layer
