Smoked Cheese Truckle & Streaky Bacon Pancakes

Try something a little different this Pancake Day with something savoury using a cheese of our finest Smoked Cheese Truckle! Sweet, salty, and cheesy, follow this recipe for the ultimate pancake treat! The question is, do you like a thick fluffy pancake, or a crêpe? Our simple recipe is perfect for crêpes, but you could stack up your big American style pancakes, and it would be just as good!

You will need:
 

- A mixing bowl
- A whisk
- A measuring jug
- A frying pan
- A cheese grater


 

Ingredients:
 

- 100g Plain Flour
- 2 Large Eggs
- 300ml Milk (we used semi-skimmed milk)
- Golden or Maple Syrup
- 4 Slices of Streaky Bacon
- A Chuckling Cheese Smoked Cheese Truckle
- A Pinch of Salt
- A Knob of Butter for Frying


 

Method:
 

1. Pour the flour, eggs, milk and a pinch of salt into the mixing bowl.

2. Using a whisk, combine the ingredients to create a runny, smooth consistency and set aside. 

3. Place a knob of butter in your saucepan and place it on the heat. 

4. Once melted, pour your mixture into the saucepan. How much mixture you pour, and the size of your saucepan, will determine how thick your pancake is. 

5. Cook your pancake for one minute each side until golden. Remove them from the heat and place them on your plate, keeping the pan on the heat. 

6. Place your three slices of streaky bacon in your saucepan and cook to your liking. 

7. Remove them from the heat and assemble them on top of your pancake(s). 

8. Finish your pancakes by grating 50g of a Smoked Cheese Truckle on top, and drizzle with either maple or golden syrup. 

9. Enjoy!
