Loaded Red Onion & Bacon Potatoes
These super simple and delicious Loaded Potatoes are perfect to serve as a tasty snack or side to go alongside a delicious BBQ! Made using our Caramelised Red Onion Truckle to add even more flavour.

You will need:

A Baking dish

A Frying pan

A Knife

A Bowl

A Spoon

Ingredients:

200g Chuckling Cheese Caramelised Red Onion Cheddar

4 Baking Potatoes
-
4 Spring Onions
-
200g Bacon Lardons
-
1 Small Red onion
-
70g Sour Cream
-
Seasoning to taste: Salt, Pepper, Garlic, Paprika
Method:

Preheat the oven to 200°C, fan 180°C, gas mark 6.

Pierce potatoes several time and apply a small amount of oil all over. Cook for 1 hour or until potatoes are golden brown and cooked all the way through. Allow to cool for 15 minutes.

While potatoes are cooking fry off Bacon Lardons and add in diced red onion to pan until cooked.

Slice slightly cooled potatoes in half and scoop the insides into a large bowl, making sure to leave the skin intact.

Add bacon, red onion, chopped spring onion, sour cream, seasonings to taste and half the grated Chuckling Cheese Red Onion Cheddar into the bowl and mix until combined.

Divide this mixture evenly between the potato skins, and sprinkle remaining cheese over the tops. Return to the oven for 20 minutes or until cheese is golden brown and bubbling.

Serve warm and sprinkle remaining spring onion and serve with sourcream (optional)
