Christmas Pudding Cheddar & Punchy Pickle Mince Pies

You will need:
- A baking tray
- A mixing bowl
- A knife
- A fork
- A small bowl
- A pastry brush
- A bun tin
- A teaspoon
- A pastry cutter
Ingredients:
- 200g Chuckling Cheese Christmas Pudding Cheddar Truckle
- 140g Chuckling Punchy Pickle
- 150g White Potatoes
- Sea Salt
- Olive Oil
- 2 Eggs (beaten)
- 1 tbsp Whole Milk
- 1 Large Sheet of Puff Pastry
Method:

Preheat your oven to 180°C.

Peel and chop the potatoes into small cubes and place on to a baking tray.

Drizzle the potatoes with olive oil and a sprinkle of sea salt and toss to ensure all are covered.

Roast the potatoes in the oven for 30 minutes, tossing half way through.

Add the cooked potatoes to a bowl.

Cut up the Christmas Pudding Cheddar into small cubes, add this to the potatoes and mix thoroughly.

In a separate bowl, beat the eggs and milk to create the egg wash. Get your bun tin and brush each cavity with the egg wash.

Use a pastry cutter that is a suitable size for your bun tray, and cut 9 rounds out of your sheet of pastry, leaving some for the toppings.

Place the pastry rounds in the bun tray, and fill evenly with the potato and cheese mixture.

Top each with 15g of Chuckling Punchy Pickle (add more if desired).

Finish off the mince pies with a pastry shape, we chose our Mascot, Munchie Mouse, and traditional round tops but get as creative as you like! Brush each pie with egg wash.

Bake for 30-35 minutes, remove from the oven, and enjoy!
