The Science of Acidification
Once we have our pristine milk, the next step is acidification. This process transforms milk from a liquid to a solid, setting the stage for cheese formation. We introduce carefully selected bacteria cultures to the milk, which consume the lactose and produce lactic acid.
The choice of cultures depends on the type of cheese being made and the desired flavour profile. Temperature control is essential at this stage – too hot, and the bacteria die; too cold, and they remain dormant. Most cheeses require milk temperatures between 30°C and 35°C for optimal culture activity.
The Magic of Coagulation
After acidification comes coagulation, where we add rennet to solidify the milk. This enzyme causes the casein in milk to precipitate, trapping fat and forming curds.

Some of our soft cheeses are ready in just a few weeks, while harder varieties may age for months or even years. During this time, we regularly turn and care for the cheeses, sometimes piercing them (as with our blue cheeses) to encourage even mould development.
